The cherries are ripe and ready to pick, and it’s a race to see who can get them first, me or the birds. So far, I am holding my own, and the kitchen shows it. I have cherries everywhere and have become like the crazy zucchini lady who surreptitiously slips unrequested fruit into your purse. Just since yesterday I have frozen cherries, candied cherries, made cherry jam and cherry marmalade, and made this yummy dessert that combines three of my favorite things; dark chocolate, red wine, and fresh cherries. Note: The brownie recipe is from our days as purveyors of gourmet mixes, so if you were a Wine Barrel Gourmet Chocolate Merlot Brownie Mix fan, this is the same brownie made at home.
- 1/2 cup whole wheat flour
- 1/4 cup all purpose flour
- 1/2 cup cocoa
- 1/2 tsp baking powder
- 1/2 cup sugar
- 1/4 cup mini chocolate chips
- 2 eggs
- 1/2 cup plain yogurt
- 1/4 cup merlot or other red wine
Preheat oven to 350 degrees. In a large bowl combine flours, cocoa, baking powder, sugar, and chocolate chips. Add the eggs, yogurt, and wine. Stir till well mixed. Spoon into a greased 8 x 8 inch baking dish. Bake for 20 – 25 minutes or until the edges have pulled away from the side of the pan. Cool. Cut into 16 pieces.
To Make Brownie Bites:
For each serving place one brownie in a dessert dish. Top with a small scoop of low-fat vanilla ice cream. Add halved fresh cherries and chopped pecans. Drizzle with chocolate syrup.
