Black Bean Burgers

Once or twice each year we make the 4 hour trek to Portland, Oregon. Portland is one of my favorite places, and there’s always too many things to do in the one or two days we are there.

But one of my favorite things, of course, is to eat. I usually try to visit Henry’s Tavern in the Pearl District for one of their scrumptious vegetarian burgers. I have no idea how the other food is – I’ve never tried it. The veggie burger calls to me each time.

So I’ve been trying to replicate their burger. This recipe comes close.


  • 1 1/2 cups partially mashed, cooked, black beans*
  • 1 1/3 cup cooked brown rice
  • 1 medium raw beet – finely grated
  • 1/4 cup diced red bell pepper
  • 1/2 tsp each; Spanish paprika and chili powder

Combine all ingredients and form into patties. Grill over medium coals until heated through. The burgers may get a little crunchy on the outside, that’s ok! Just make sure they are warmed all the way through. Serve with cheddar cheese, a hearty beer-based mustard, lettuce, tomato, and sliced avocado.

* I used leftover beans from a big batch of Renee’s Black Beans. The heart healthy recipe can be found in The New Contented Heart Cookbook – Recipes for a Healthy Heart. However, you can use a 15oz. can of drained, rinsed black beans plus additional chili powder (to taste) instead.
